Review: I am a bit of a Japanese knife snob, but by no means an expert. . The knives are Japanese inspired, but made in China. The Aus-10 is a good stainless steel and on par with my lower end VG10 Japanese knives. A HRC of 60 is probably on par based on the steel, but it takes time to find out.They were sharp out of the box. I did a paper cut test and they performed pretty good. We used them on sausage, and they cut through the casing effortlessly with no pressure.The serrations should help them stay sharper longer on ceramic plates if the hardness is correct

Review: The knives came in a beautiful box similar to what you’d expect for a $200 set of this quality. The design and construction of the knife is what I’ve been looking for. It feels good in your hand and it’s well balanced. No problem slicing through the toughest cuts of meat. Although the one thing that threw me off a bit was the description of the product. Where it says it’s made of fine Japanese AUS-10 High Carbon Steel. And the handle made of Pakkawood which is used in the making of Japanese knives Immediately it drew me to purchase a Japanese made knife. However once I got the product and checked the packaging in fine print: Made in China. But that aside it’s a great product.
